Flaky Pie Crust

2 cups whole wheat pastry flour
1 tsp salt
1/2 cup lard or 2/3 cup chilled butter
1/4 cup ice water

Cut shortening into dry ingredients with pastry cutter until particles of fat are the size of large peas. Add water and mix only enough to moisten ingredients. Divide into two parts and roll 1/8″ thick.

1/2 cup butter
2/3 cup brown sugar or honey
1/2 tsp. salt
1 tsp. baking powder
1/8 tsp. cinnamon
1 tsp. vanilla
1/2 cup water
1 1/2 cup whole wheat flour

Cream butter & sugar in mixer. Combine remaining ingredients & add to creamed mixture, alternating with water. Mix well on Speed II. Let stand 30 minutes. Separate into 2 equal balls. Place each ball on greased sheets and roll to 1/8″ thickness. Score lines across with table knife to make 2″ squares. Sprinkle with cinnamon. Bake 350 degrees for 20 minutes.

Mayonnaise

1 egg
1/2 tsp. mustard
1/4 tsp. salt
1 Tbl. honey
1 Tbl. vinegar
1 Tbl. lemon juice
1 cup oil

Combine all ingredients except 3/4 cup oil and blend until smooth. Add remaining oil very slowly – drops – into the center of the liquid as it is blending on medium speed until all oil is combined and the consistency is thick.

Better-Butter

1 cup safflower, canola, soy or vegetable oil
1 cup butter (2 sticks)
2 tablespoons dried skim milk
1/4 teaspoon lecithin
1/2 teaspoon salt

Dissolve salt in water in blender. Add all other ingredients and blend until smooth. Pour into containers and store in refrigerator.

Bacardi Eggnog

The heavy cream really adds a richness you just don’t get with plain old rum and nog.

Stir 12 oz Bacardi Rum into 1 quart of dairy eggnog mix.  Fold in 1 cup whipped heavy cream.  Chill.  Stir.  Sprinkle with nutmeg.

Makes 12 servings

National Hamburger Day & Kiwi Fruit Day – December 21st

Happy National Hamburger Day!

I found several dates listed for National Hamburger Day including May 29th, July 28th, and December 21st, but I don’t think there can be too many days dedicated to the hamburger.

Many people have claimed to be the creator of the American Hamburger, but the topic is still open for debate. Regardless of its origins, the hamburger’s rise to fame and subsequent variations are not only mind-boggling, but fascinating.

Did you know:

  • In Minnesota, a Jucy Lucy, is a hamburger cooked with cheese inside the meat patty. A piece of cheese is surrounded by raw meat and cooked until it melts, resulting in a molten core of cheese within the patty.
  • A hamburger smothered in red or green chile is called a slopper.
  • In Alberta, Canada a kubie burger is a hamburger made with a pressed Ukrainian sausage called kubasa.
  • In Mexico, burgers are often accompanied by ham and avocado.
  • At $499, the world’s largest hamburger commercially available, tips the scales at 185.8 pounds and is on the menu at Mallie’s Sports Grill & Bar in Southgate, Michigan. It is called the Absolutely Ridiculous Burger, which takes about 12 hours to prepare.
  • McDonald’s in New Zealand created a Kiwiburger, similar to a Quarter Pounder, but features salad, beetroot and a fried egg.
  • The Hungry Jack’s (Burger King) Aussie Burger has tomato, lettuce, onion, cheese, bacon, beetroot, egg, ketchup and a meat patty.

 

Happy Kiwi Fruit Day!

Kiwi Fruit Day was listed as both a California only holiday and a national holiday. I opted for the national holiday because I want an excuse to eat a kiwi today.

The kiwi or kiwifruit is also known as the Chinese gooseberry. The fruit was renamed for export marketing reasons in the 1950s; briefly to melonette, and then later by New Zealand exporters to kiwifruit. The name kiwifruit comes from the kiwi — a brown flightless bird and New Zealand’s national symbol. Kiwi is also a colloquial name for the New Zealand people.

National Fried Shrimp Day & National Sangria Day – December 20th

Happy National Fried Shrimp Day!

Deep fat fried shrimp was one of my favorite things to order when I was a kid and almost every restaurant seemed to have it. I’ve never made it from scratch as my access to fresh seafood is limited and sometimes scary in the midwest, but I’ve always wished I lived on a coast where shrimp was more readily available. I could eat seafood every day, but I’ll always have fond childhood memories of fried shrimp.

I do have some breaded shrimp in the freezer though, so I know what I’m having for lunch now! If I put fried shrimp on a salad that makes it healthy, right? I’m going to pretend it does!

 

Happy National Sangria Day!

Sangria is a wine punch from of Spain and Portugal and is also consumed in Argentina and Uruguay. Sangria’s ingredients can vary depending on where it’s made. Sangria often consists of red wine, chopped fruit, a sweetener, and a small amount of added brandy. The fruits are are chopped or sliced  and vary depending on location, availability and taste. Some fruits used are oranges, lemons, limes, apples, peaches, melons, berries, pineapples, grapes and mangoes. The fruit or nuts can be left in the drink or removed depending on taste. A sweetener such as honey, sugar, simple syrup, or orange juice is added. Instead of brandy, other liquids such as Seltzer, Sprite or 7-Up may be added or Sangria can be made from wine grapes for a nonalcoholic version.

Date Nut Bread

2 cups sifted Flour  1/2 cup Milk
1/4 cup Sugar  1/2 cup light or dark corn syrup
1 Tablespoon Baking Powder  2 Tablespoons Vegetable Oil
 1/2 teaspoon salt  1/2 cup chopped Pecans or favorite nuts
 1 egg beaten  1/2 cup chopped Dates
  1. Heat oven to 350 degrees.
  2. Grease a 9 1/2 by 5 1/2 by 3-inch bread loaf pan.
  3. Sift together flour, sugar, baking powder and salt into a mixing bowl.
  4. In a medium bowl combine egg, milk, oil, and syrup and pour into flour mixture. Mix just enough to blend. Do not over mix.
  5. Pour batter into loaf pan. Bake 50 to 55 minutes or until a toothpick inserted in the center of the loaf comes out clean.
  6. Cool for 10 minutes then turn out on a rack to cool.

Consider serving with Cream Cheese Frosting.

Cream Cheese Frosting

Sometimes I add additional cream cheese (about 4 oz) for a richer, thicker frosting depending on what I’m using it for. For a sweeter frosting, add another 1/2 cup powdered sugar.

1/2 cup butter, softened 3 1/2 cups powdered sugar
8 oz cream cheese, softened 1/2 cup chopped nuts, optional
1 teaspoon vanilla

Combine butter and cream cheese. Beat until smooth. Add vanilla and powdered sugar. Beat until smooth and spreading consistancy. Fold in nuts if desired.

Makes enough to frost three 8 inch cake layers.
